Almond and Vanilla Granola





(Servings: makes 12)


Start your day right with a bowl of vanilla and almond granola - a deliciously crunchy and naturally sweet way to kick off your morning. The warm notes of vanilla pair perfectly with the nutty crunch of toasted almonds, creating a breakfast that's both satisfying and full of flavour.


Ingredients

2 tsp pure vanilla extract

1⁄4 tsp almond extract

1⁄2 cup pure maple syrup

1⁄2 tsp salt

1⁄2 cup coconut oil, melted or vegetable oil 4 cups old-fashioned oats1⁄2 cup slivered almonds

1 tbsp sultanas

Sprinkle of cinnamon

 

Instructions

1. Pre-heat oven to 325°F/160°C.

2. Mix liquid ingredients in a mixing bowl. Pour in 4 cups oats and stir well.

3. Pour on a baking sheet and spread in one layer.

4. Bake for 25-30 minutes, stirring twice during baking.

5. Cool thoroughly. Can be stored in an airtight container for up to 1 week.
