Serves 2 Ingredients
6-8 ounces chicken breast, baked
2 cups chopped cucumbers
1 avocado, peeled and chopped
½ cup loosely packed cilantro, chopped
juice of one lime
salt and black pepper, to taste
2 cups of mixed greens (optional)
4 collard leaves or romaine lettuce leaves (optional)
Method:
1. Preheat oven to 400 F.
2. Season chicken with salt and pepper and place on a lined baking sheet.
3. Place in the oven and cook for 20 minutes.
4. Flip chicken and cook another 10-15 minutes, until cooked through. Remove from oven and let cool.
5. While the chicken is cooking, combine the chopped cucumber, avocado, cilantro and lime juice in a large bowl and mix well, seasoning with salt and pepper.
6. Cut the chicken up into 1-inch cubes and add to the mixture in the bowl. Serve mixture over mixed greens or wrapped in leaves.
