Ingredients
2 cups mixed lettuce
1 handful of spinach, kale, or watercress
1-2 tablespoons chopped fresh herbs
75g Medium roasted sweet potato
1 cup mixed vegetables
Grilled chicken OR boiled eggs (2 large)
1-2 tablespoons roasted nuts or seeds
50g Avocado
1 tablespoon pomegranate seeds
Dressing:
1 tablespoon olive oil
1 teaspoon fresh lemon juice
¼ teaspoon turmeric powder
Pinch of black pepper
Method
Combine lettuces, leafy greens, herbs, mixed vegetables, and roasted sweet potato in a bowl.
Add your chosen protein, roasted nuts or seeds, avocado, and pomegranate seeds.
