Packed with fibre-rich oat bran, juicy bursts of blueberries, and just the right touch of natural sweetness, they’re a wholesome way to fuel your morning.

Ingredients
6 Eggs
1 1/8 cups Plain Greek Yogurt (divided)
1 tbsp Cinnamon
3 tbsps Ground Flax Seed
1 1/2 tsps Stevia Powder
1 1/2 cups Oat Bran
2 1/4 cups Blueberries (divided)
1 tbsp Extra Virgin Olive Oil
Method
In a mixing bowl, whisk together the eggs, half of the yogurt, cinnamon, ground flax, and stevia.
Add the oat bran and mix until a batter forms. Fold in 2/3 of the blueberries.
Heat the oil in a pan over medium-high heat. Scoop 1/2 cup of batter at a time into the pan, and cook until bubbles start to form. Flip and cook for another one to two minutes. Repeat with the remaining batter.
Plate the pancakes and top with the remaining blueberries and yogurt. Enjoy!
