Ingredients
1 cup of grated carrots
1 cup of grated courgettes
1 cup of grated sweet potato
1/2 cup of finely chopped red peppers
1/2 cup of finely chopped kale
1/2 cup of finely chopped leeks
1/2 cup of finely chopped red onion
4 eggs
1 tsp Himalayan salt
1/4 tsp ground black pepper
3 tsp coconut oil
Method
Place all ingredients into a mixing bowl
Lightly beat the 4 eggs, then add to the vegetables and mix together
Add the salt and pepper
Shape into patties of whatever size you prefer
Heat the coconut oil in a frying pan
Fry the patties on a low heat for approximately 5 minutes on each side
